Spicy Chicken Livers Recipe

Ingredients

  • 500g chicken livers, cleaned and trimmed
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp peri-peri spice (or cayenne pepper)
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • 1/2 cup tomato puree
  • 1/4 cup cream (optional for richness)
  • Fresh parsley for garnish
  • 2 Portuguese rolls
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • Pinch of salt
  • Optional: grated cheese for topping

Instructions

Heat olive oil in a skillet over medium heat. Add chopped onions and sauté until translucent. Stir in garlic and spices—paprika, peri-peri, cumin—and cook until fragrant.

Add the chicken livers and sear until browned on all sides. Pour in tomato puree and simmer for 10–12 minutes until the livers are cooked through. For added creaminess, stir in the cream and simmer for another 2 minutes. Garnish with fresh parsley.

Mix butter, garlic, and salt. Spread generously on halved Portuguese rolls. Toast in the oven at 180°C (350°F) for 5–7 minutes until golden. For a cheesy twist, sprinkle grated cheese before toasting.
